My Butchers block smoking planks are used as a versatile cooking method where food is placed on top of a fragrant plank of wood to cook over a heat source. The plank or wood has a characteristic flavor and aroma that it infuses into the food as heat is applied. Plank board Braaing is popular with fish like salmon and others, but planks can be used with other meats, pizza, vegetables, fruits and cheese too. The result is juicy and moist flavour-filled and aroma-rich food.

2 salmon steaks, skin on

tub cream cheese

1 Tbsp wholegrain mustard

1/3 cup horseradish ( creamed or fresh )

1/2 lemon, juice and zest

1/4 orange, juice and zest

Salt

  • Soak maple plank in water overnight or for at least an hour.

  • Place braai planks on an open flame for 1-2 minutes on the side you will be arranging and braaing your dish.

  • Arrange salmon steaks on the cedar plank and cover with a kettle braai lid to cook to your liking.

  • Combine remaining ingredients in a bowl and mix well.

  • Serve with a squeeze of lemon and a spoonful of cream cheese sauce.

2 Granny Smith apples, cored

1 Bunch fresh Rosemary

250ml Honey

1 tsp Ground cinnamon

pkt Toasted walnuts

  • Soak maple plank in water overnight or for at least an hour.

  • Place braai planks on an open flame for 1-2 minutes on the side you will be arranging and braaing your dish.

  • Combine 50ml honey and cinnamon, mix and rub over and inside apples.

  • Char apples on an open flame, then arrange on cedar plank.

  • Place remaining honey in a pot, bash rosemary with a rolling pin to bruise the leaves. Place in honey and simmer gently for 30 minutes to infuse. Cool, then strain.

  • Arrange apples, drizzle with honey and place a kettle lid over the planks. Braai for 20-30 minutes or until cooked through.

  • Serve with extra honey, chopped walnuts and ice-cream, whipped cream or honey.
