Every day at noon in the dining hall of New College, Oxford in the 1770s, a feast was laid for students and the dons, clad in white waistcoats and wigs. They sat down to cod with oysters, ham, fowls, boiled beef, rabbits smothered with onions, mutton, veal collops, pork griskins, New College Puddings, mince pies, and roots (vegetables). That was only the first course. For the second course, they were served roast turkey, a haunch of venison, a brace of woodcocks, snipes, veal olives, trifle, blancmange, stewed pippins, and preserved quinces. Ralph Ayres was the genius behind this daily repast, and his choice recipes are chronicled here in "Ralph Ayres' Cookery Book,"
If you've ever wondered what a London Wigg was or why plum cake does not actually contain plums, "Ralph Ayres' Cookery Book" will prove to be a most rewarding collection. Here the details of sumptuous British meals are meticulously presented, as is their larger context in the history of cooking. Recipes for such famous dishes as Quaking Pudding, Oxford Sausages, Damson Preserve, and other savory English delights fill the pages. Some, such as the famous New College Pudding, are still used today. The volume is beautifully produced, featuring a wealth of full-color botanical illustrations and elegant script reproduced from the original text, and also includes an informative foreword by Bodleian emeritus librarian David Vaisey.
A captivating glimpse into the world of eighteenth-century food and the culture of academia's apex, "Ralph Ayres' Cookery Book" is a valuable and engaging historical chronicle of British cuisine. It will appeal to social and culinary historians, as well as to the many lovers of griskin andcollops.

Never before published in the UK, this is hilarious, personal and full of Colwin's hard-won expertise. Home Cooking will speak to the heart (and stomach) of any amateur cook, professional chef, or food lover. Praise for Laurie Colwin: 'Everything food writing should be: funny, profound, inspiring and unaffected' Nigella Lawson 'I have in my kitchen a book called Home Cooking. And, in between following the recipes for Extremely Easy Old-Fashioned Beef Stew or Estelle Colwin Snellenberg's Potato Pancakes, I would frequently sit down on a little stool in my kitchen and read through one of the essays in that book. I never read through Joy of Cooking, and I can read The Silver Palate Cookbook standing up, but I always sat down to read these' Anna Quindlen Laurie Colwin is the author of five novels - Happy All the Time, Family Happiness, Goodbye Without Leaving, A Big Storm Knocked It Over and Shine On, Bright and Dangerous Object - three collections of short stories - Passion and Affect, The Lone Pilgrim and Another Marvellous Thing - and two collections of essays, Home Cooking and More Home Cooking. Food is a language that communicates beyond the limitations of words. It is true that we are what we eat. Not only physically, but also emotionally. The Spanish are very much Sangria, tapas and paella people. The French are foie gras, champagne and haute cuisine. The Germans beer and eisbein, the Italians wine, pasta and slow food. And Namibians? We are the braai, kapana, lazy afternoons and long evenings around a fire - we are a hearty feast of the very best of meat grilled on real wood fires under an endless sky. It is beautiful to see how people cook and eat the way that they talk, think and live. But the language of food also has a more private and individual significance. It is a way for us to demonstrate tove and compassion when words alone are not enough. Home-cooked meals bring families together around tables, where people sit and talk, make eye contact and connect again. In the kitchens of all our earth mothers and patres familias, meals are prepared to feed bodies and souls, to make memories and to create a legacy of love that is passed on from generation to generation. So every recipe book becomes a collection of love letters, a recollection of history, stories of times and people and places that were good, that made life better for the people for whom the food was prepared. I love to cook. Whether it began out of I sheer desperation to save us from a I potential embarrassment of having my mom cook for dignatories when I was 12, or whether it is the relaxed atmosphere of my farm kitchen, surrounded by my husband Chris and my children Christoph and Marietjie, our faithful dogs and always as many friends and family we can get together around a table. I love to cook. Through the years, through chance encounters with random foodies on my path, I realised that I was destined to cook. Lovely flavours, exotic combinations and strong tastes resonated with me. It was especially during the early time of my marriage to Chris - when we lived in Oshakati during the last years of the war and where we met ail these interesting and fun people and eating together was the main recreational activity in our lives - that I really fell deeply in love with the art of food. The older women in our social circles taught me so much about how to mal gourmet meals out of limited and erratic supplies. This is the story of food in Namibia: making the best of what you have, practical and maximal. It is metaphorical of the character of our nation. Back in Windhoek my career took its course, from cooking demonstrations for food enthusiasts to judging braai competitions for various farmers associations and the odd party catering favour to friends to a fully fledged catering business. I became involved in the annual national Tourism Expo, developing the "Chef's Theatre", which was an incredible journey. I met many of the giants in the gourmet industry and some of them have become my dearest and closest friends. I have embraced every opportunity to travel, to experience new cultures and learn about people through their cooking. I fanatically collect recipes and cookbooks. I love it, especially when the great loves of my life, my family, my friends and good food, all come together, which is what this book is all about.

In this new book, the follow-up to his bestselling River Cottage Cookbook, Hugh writes about the year on his Dorset smallholding. He recalls, month by month, the highs and lows of past years, and anticipates the 12 months ahead - what'll be in season when, and when'll be the best months to crack on with such tasks as chick rearing and sheep shearing, haymaking and hedge laying. But, for all its outdoorsy information, the real focus of THE RIVER COTTAGE YEAR is indoors - at Hugh's kitchen table. With over 100 brand new recipes, this is above all a cookery book and for once a genuinely seasonal one, celebrating local seasonal produce at its very best - chestnuts in January, artichokes in March, rhubarb in April, asparagus in May, strawberries in June, blackcurrants in July, tomatoes in August, plums in September, apples in October, pumpkins in November and parsnips in December... Full of his hard-earned smallholder's wisdom, seasoned with his infectious good humour, THE RIVER COTTAGE YEAR is Hugh's rallying cry for us to reclaim the seasons.

"I love the accessible, multi-cultural recipes from this family of women." Dana Cowin, editor of "Food and Wine" magazine. Irresistible and easy-to-prepare recipes and menus from this family of fantastic cooks.
There is a family of 5 daughters, each an outstanding cook -- Jane, Ellen, Sibyl, Anne, Susan. And their brother's wife, Yvonne, who cooks like a dream. Not surprisingly, there's the matriarch, Esther Rose, also a great cook.
Th"e Daily Feast" is the collection of irresistibly tasty, but easy-to-prepare recipes which have won their way onto the Graber families' tables. These are the recipes they prepare for their guests. These are the dishes they make when the whole extended family gets together.
For years, the Graber family cooks have passed their favorite recipes back and forth among themselves as they've left their Indiana home and scattered around the world, always learning to make and love the local dishes wherever they've lived. But always at the center of the growing collection were their own versions of beloved American dishes.
In "The Daily Feast," each of the 7 Graber cooks presents 3 complete menus -- one for a soup meal, the second for a family week-night supper, and the third for a more elaborate guest dinner. In addition, the Grabers offer menus and recipes for their favorite special-occasion meals.
Esther Rose presides over this treasury of both comforting and adventuresome recipes as effortlessly as she does her own table.
Full-color photography of the finished dishes underlines the family's daily practice of beauty and good taste around the table
