Excerpt: ... GERMAN RECIPES The first five recipes were given me by an Hungarian lady who belonged to the household of the German Emperor, William I. The last six are those used by a St. Louis German cook whose cooking is wunderbar. KAISER SMOREN (Called Kaiser's Pudding because it was a favorite dish. of Emperor William I) i egg. I cup of milk. Beat them together, and add a little salt. Add as much flour as for pancakes. Put the batter in a hot larded pan. Fry slowly on both sides. Cut into small blocks and fry until brown. Put in a bowl and sugar to sweeten. SCHOLA (Christmas Coffee Cake, very hard to make) J4 pound of butter. I cup of sugar. 2 eggs. 1 pint of milk. Y2 pound of raisins. % pound of citron, cut in pieces. Grated rind of 1 lemon. Yz cup of almonds, scalded and chopped in halves. 2 cakes of yeast. Salt to suit taste. Stir the butter with the eggs and sugar to a cream. Add a little flour and a little milk. Dissolve the yeast in a little water and add to the above, then add the raisins, citron, lemon, and almonds. Add enough flour to make it stiff so that dough won't stick to hands while working. Set away in a warm place to rise. After the dough has raised cut in nine equal pieces. Roll in long pieces, braid three of them for bottom layer and put in pan. Moisten top with a little water, then braid other three in same way and place on bottom layer, then do the last in same way. Let rise again, and before putting in oven, beat one egg and with baking brush, lightly cover dough with the egg. Bake for an hour and a quarter.
